I've been looking for a way to rid my BlackBerry of that annoying picture-taking-sound every time I take a picture with my Pearl. Went through the menus to no avail.
I've not been able to find that option either. Niether have a found an application you can install to stop it either.
I've been noticing on a lot of new devices that you can't turn it off. I think that they are doing that for personal security reasons. Mostly to keep peepers from taking pictures without the person knowing. Just a thought.
I dont remember where I saw this, but its at least a workaround until a toggle gets "discovered"
1) plug your headphone in,
2) go into the media player,
3) play a song,
4) pause it,
5) hit the camera side button,
6) take a pict... the click will be in your headphones.

I don't have a problem with the camera click. There are lots worse out there -like that click on the N95 for example. That that really IS offensive!
